During this time of recovery food seems to become more important than ever. Adding more flavor to meals seems to help make the pureed texture more tolerable. Hopefully these recipes will help get you through your recovery process.
Beef Tips with Peppers and Onions
1/2 lb. beef surloin tips 1 each - red and green bell pepper
1/2 C chopped onion 1 - 2 Tbs. butter
seasoning
Cut beef tips into small pieces. Over medium heat brown meat on all sides; set aside. Chop onion and 1/2 of each bell pepper. Melt butter in medium skillet over medium low heat; add onion and peppers. Saute` until onion is transparent and pepper are soft cooked. Add surloin tips, cover and continue cooking until meat in well done and tender. A little water can be added to keep from sticking to skillet.
To puree, add about 1/2 C of beef tips and peppers to a blender. Blend to break up meat, then add just enough water to get a very soft consistancy but not watery. Sprinkle with a little shredded cheese and melt before serving.
Chicken Salad
1 or 2 chicken breasts, cooked 1-2 Tbs. Mayonaise
(seasoned to taste)
1 Tbs. sweet pickle relish 1/4 C onion, chopped
water chips
Cut chicken into small pieces and place in a small bowl. Add mayonaise, relish and onion. Mix well. Add all to blender with just enough water to puree. Crush chips and sprinkle over salad just before serving.
